Instructions for Making Flowers in Caramel Sugar

Ingredients

Directions

  1. Prepare dip-models made of lead attached to a wire with a hook.

  2. Drive two iron rods or skewers into a thick board, three feet apart, and stretch a wire between them.

  3. Oil the lead models and place them on a clean dish.

  4. Boil the sugar until it reaches the crack stage, then add food coloring to achieve the desired shade.

  5. Dip each model in the sugar up to the edge, avoiding overflow.

  6. Hang each dipped model on the wire to cool and stiffen.

  7. Pinch off a small knot of sugar at the pointed end of the model to form the stalk before it cools.
