What each ingredient does

Cherries
Provide the main cherry flavour and colour for the ice.
Syrup
Adds sweetness and lowers the freezing point so the ice stays smooth.
Lemon juice
Adds acidity that brightens the cherry flavour.

The step that matters

Freezing the mixture in a mold. Sugar and acid lower the freezing point and slow ice crystal formation, so the mixture must be frozen until fully firm without over-stirring, which would form large, coarse crystals. Checking for a uniformly solid texture prevents a partly liquid or icy result.

Swap the lemon

How well each one fits the dish's main ingredients (cherry, syrup):

  1. Vanillafits better
  2. Peachfits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against cherry, syrup. Candidates are from the same food group and used in at least 100 recipes.
