Ingredients

Directions

  1. Remove feathers and singe the snipes. Cut off their necks and feet, then halve them.

  2. Remove the backbone and wipe the inside with a napkin.

  3. In a sauté pan, combine melted butter, grated bacon, parsley, mushrooms, truffles, shallot, salt, and nutmeg.

  4. Add the snipes and simmer on moderate heat for 20 minutes, turning occasionally to ensure even seasoning.

  5. Let the mixture cool, then chop the snipes' meat and pound it in a mortar.

  6. Mix in godiveau, sweet herbs, and nutmeg.

  7. Prepare a pie crust 7 inches in diameter and 4 inches high.
