Hot Pie of Lambs’ Sweetbreads

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Soak and blanch the lambs’ sweetbreads.

  2. Cut them into scallops and simmer with sweet herbs for 15 minutes.

  3. Prepare a pie crust and mask the bottom and sides with fine force-meat.

  4. Arrange the cold sweetbreads in a crown shape inside the pie.

  5. Cover with seasoning, laurel leaves, and larding bacon.

  6. Bake in a 350°F (175°C) oven for 1.5 hours.

  7. Remove excess fat and cover with glazed demi-Spanish sauce mixed with jelly broth and essence of mushrooms.

  8. Garnish with mushrooms and artichoke bottoms.
