Nougats, with Currants and Coarse Sugar

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds and cut them into fillets.

  2. Place the almonds in a 300°F (150°C) oven until slightly colored.

Make the nougat

  1. Melt the sugar until dissolved and it begins to look red.

  2. Stir the almonds into the melted sugar with a spatula.

  3. Pour the mixture onto a plate and sprinkle with currants and coarse sugar.

Cut and serve

  1. Cut into half-moons using a 2-inch paste-cutter.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main bulk and nutty texture of the nougat.
Pounded sugar
Melts to form the sticky, set base that binds the almonds together.
Currants
Add small pockets of chewy sweetness and fruity flavor on the surface.

The step that matters

Melting the sugar. Sugar must dissolve fully and reach a light reddish caramel color; under-melted sugar stays grainy, while over-heated sugar turns dark and bitter, changing the flavor and setting.

Swap the currant

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
