Meringues

Why it works: Pistachio and vanilla match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 407 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Meringues

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Whip egg whites until stiff, gradually adding granulated sugar until glossy.

  3. Form meringues on a baking sheet, creating a rose or double ring with pistachios on top.

  4. Bake until lightly colored, then press the insides down gently with a spoon.

  5. Cool the meringues, then fill with preserves or crème plombière just before serving.

  6. Optionally, sprinkle coarse sugar on top before baking for added texture.
