Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Ginger Preserve
Ingredients
Directions
Clean and cut the ginger roots into neat pieces, then soak them in cold water.
Boil the ginger in fresh water three times, cooling it in cold water each time.
Drain the ginger and boil it in fresh water until tender.
Peel the ginger and place it in cold water mixed with lemon juice or vinegar to keep it white.
Drain the ginger and place it in an earthen pan.
Pour a thin syrup over the ginger when cold, ensuring it is well covered.
After 2-3 days, drain off the syrup, add more sugar, and boil to a large thread.
When cold, pour the syrup over the ginger and repeat boiling the sugar to a higher degree until the ginger is clear and fully impregnated with sugar.

Swap the lemon
How well each one fits the dish's main ingredients (ginger, sugar):
- Lemonthe original
- Orangefits about as well
- Limefits less well
- Vanillafits less well
Fit is the average pairing score against ginger, sugar. Candidates are from the same food group and used in at least 100 recipes.
