What each ingredient does

Egg whites
Whipped to a froth, they lighten the ice and give it a airy, foamy texture.
Sugar
Boiled to the ball stage and grained, it sweetens the ice and adds body as it crystallises.
Rum
Adds aroma and flavour and softens the ice, since alcohol resists freezing.
Brandy
Adds aroma and flavour and keeps the ice softer by lowering its freezing point.
Champagne
Adds acidity and lightness to the flavour and softens the frozen texture.
Maraschino
Adds sweetness and a distinct cherry-like aroma to the ice.

The step that matters

Graining the sugar. Sugar must reach the ball stage and be rubbed against the sides until it turns white. If it is undercooked or not grained, it will not combine well with the egg whites and the texture will be grainy or runny.
