What each ingredient does

Fresh cream
Provides fat and richness, giving the mousse its smooth, creamy body.
Clarified isinglass
Acts as a gelling agent that sets the cream so the mousse holds its shape when chilled.
Sweet almonds
Supply the main almond flavour and body of the mousse once pounded into a paste.
Bitter almonds
Add a concentrated, aromatic almond flavour in a small quantity.

The step that matters

Constantly stir the mixture until it boils. Isinglass is a gelatin-like protein that must be fully dissolved in the hot cream to set properly. Constant stirring prevents the cream from scorching or catching on the base of the pan, which would give a burnt taste and uneven texture.

Flavor stand-ins for the orange

How well each one fits the dish's main ingredients (almond, cream):

  3. Avocadobetter flavor fit
  4. Orangethe original

Fit is the average pairing score against almond, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
