Why it works: Almond and spinach match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 352 recipes. Both carry nonanal, which smells fat, citrus. The science ↓

Filbert Rout Cakes

Ingredients

Directions

Shape the pieces

  1. Roll out the smooth paste with sifted sugar to ⅛ inch thick.

  2. Use a tin cutter to stamp out leaf shapes resembling filbert hulls.

  3. Surround the bottom of each kernel with four leaves, pinching them together to form a stem.

  4. Cluster two to four kernels together and set them upright on a waxed baking sheet.

Dry and bake

  1. Let the cakes dry in a cool place until the next day.

  2. Bake the filberts in a low heat oven until dry, with little or no color.

Decorate

  1. Prepare royal icing by mixing the egg white with food coloring; paint the kernels brown and the leaves green.

What each ingredient does

Smooth paste
Gives the leaves and kernels a firm, pliable body that holds their shape.
Sifted sugar
Sweetens the paste and keeps it from sticking while it is rolled out.
Egg white
Binds the royal icing and dries to a hard, glossy coating.

The step that matters

Baking the filberts low until dry. Sugar and proteins brown quickly at high heat, so a hot oven can darken the pieces and make them taste bitter. A low oven dries them out while keeping the color pale, as the recipe asks.

Swap the spinach

How well each one fits the dish's main ingredients (sugar, almond, egg, chocolate):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits better
  4. Spinachthe original

Fit is the average pairing score against sugar, almond, egg, chocolate. Candidates are from the same food group and used in at least 100 recipes.
