Bonbon Almond-Paste Rout Cakes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the almond paste as described in recipe No. 272.

  2. Roll out the paste thinly and cut or stamp it into small rounds, about the size of half-crown pieces.

  3. Bake the pieces on buttered baking sheets in a moderate oven at 350°F (175°C) until done.

  4. Once baked, stick two pieces together with jam.

  5. Mask the surfaces of the cakes with more jam.

  6. Glaze the cakes with any kind of transparent icing.
