What each ingredient does

Loaf sugar
Forms the syrup base, and as it cooks it becomes the sweet, thick body of the icing.

The step that matters

Skimming off the scum. Scum rising on the boiling syrup is made of impurities and can cloud or spoil the finished icing, so it should be removed fully each time it forms.
