Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Whisk the egg whites to stiff peaks.

  3. Mix one-third of the egg whites into the yolks with vanilla until smooth.

  4. Gently fold in the remaining egg whites until well combined.

  5. Pipe the mixture onto stiff paper in 4-inch lengths.

  6. Dust with fine sugar through a sieve.

  7. Shake off excess sugar and place on plates.

  8. Bake in the preheated oven until golden.

  9. Use a flat knife to remove biscuits from paper.
