Angelica Comfits

Ingredients

Directions

  1. Cut the angelica into small rings.

  2. Blanch the rings in hot water, then transfer them to cold water.

  3. Drain the angelica and place it in syrup.

  4. Boil until the syrup reaches the pearl stage.

  5. Remove from heat and place on sieves to dry in the stove, turning occasionally to prevent sticking.

  6. Once dry, place them in a comfit pan and work them as you would with cinnamon comfits.

Recipe from a historical cookbook (Internet Archive).
