Why it works: Almond and lemon match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 5,655 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Orgeat Syrup
Ingredients
Directions
Boil sweet and bitter almonds in water until the skins peel off easily.
Transfer almonds to cold water, then pick and rinse them in fresh water.
In a clean marble mortar, pound the almonds with lemon juice, adding ½ pint of spring water gradually.
Once fully pounded, mix with another ½ pint of water and strain through a cloth, twisting to extract the almond milk.
Return the almond paste to the mortar, pound again with a little more water, strain, and combine with the previous almond milk.
