Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

  1. Cut angelica into small rings.

  2. Blanch the rings in hot water, then transfer to cold water.

  3. Drain the angelica and place it in syrup.

  4. Boil until the syrup reaches the pearl stage.

  5. Remove from syrup and place on sieves to dry in the stove, turning occasionally.

  6. Once dry, place in a comfit pan and work as with cinnamon comfits.
