What each ingredient does

Sweet almonds
Provide the main body and nutty flavour of the paste.
Egg whites
Bind the ground almonds into a paste that holds its shape.
Powdered sugar
Sweetens the paste and stiffens it for shaping.

The step that matters

Let them hang until dry enough to stand up stiff. Drying the shaped paste before baking lets the surface firm up so the pieces keep their form instead of spreading or slumping in the oven.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well
