Candied Fruit

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Preserve the fruit in syrup, strain, and rinse in warm water to remove excess sugar.

  2. Ensure the fruit is completely dry.

  3. Arrange the fruit in a nearly square mold with wire gratings, placing them side by side without touching.

  4. Cover each layer of fruit with another type, finishing with a grating on top.

  5. Place a weight on top to keep everything firm.

  6. Heat the mold in a moderate oven (350°F / 175°C).

  7. Boil enough clarified sugar to fill the mold, removing it from heat when it reaches a light boil.

  8. Skim off any candy formed on the surface as it cools.

  9. Pour the sugar into the mold and let it candy undisturbed for 10 to 12 hours.

  10. Strain the candy by uncorking the mold and tilting it over a bowl to catch the syrup.
