On Candying Fruit
Ingredients
Directions
Wash the fruit in lukewarm water and dry it in the stove.
Boil sugar and water to a blow (soft ball stage).
Add the fruit to the syrup and boil until the syrup reaches the blow again.
Remove the pan from the heat and let it stand for a few minutes.
Grain the sugar by rubbing the inside of the pan with a skimmer until it begins to whiten.
Stir the fruit into the white sugar mixture using a fork.
Place the fruit on a wire rack over a pan to drain and dry.
