Ingredients

Directions

The book says “a slack oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Make the paste

  1. Pound the almonds very fine with the egg whites.

  2. Add the powdered sugar.

  3. Beat to a stiff paste.

  4. Work the paste on a surface.

  5. Roll it out.

Shape and bake

  1. Cut into walnut-sized pieces.

  2. Dip one end in cochineal.

  3. Squeeze through a wire sieve to form half-penny shapes.

  4. Let them hang downwards until dry enough to stand up stiff.

  5. Bake on plates with parchment paper underneath in a slack oven (300°F / 150°C).

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the biscuit.
Egg whites
Bind the ground almonds into a paste and help the biscuits set when baked.
Powdered sugar
Adds sweetness and helps the paste hold a stiff, smooth texture.

The step that matters

Let them hang downwards until dry enough to stand up stiff. The shapes must form a dry surface skin before baking. If they are still moist, they will spread or lose their shape in the oven.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
