Oyster Stuffing: for Chickens, Etc.

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the stuffing

  1. Melt the butter.

  2. Pour the melted butter over the bread and cracker crumbs in a pan.

  3. Strain the oyster liquor into the mixture.

  4. Add the egg, salt, and pepper.

  5. Stir gently to mix without making it pasty.

  6. Fold in the whole oysters.

Roast the fowl

  1. Prepare the fowl by placing it in a small pan with some salt on the bottom.

  2. Add the gizzard, heart, or any small meat pieces, along with 1 cup of drippings.

  3. Pour in 1 cup of hot water.

  4. Cover with greased paper.

  5. Cook in the oven at 350°F (175°C) for about 1 hour.

  6. Remove the paper.

  7. Baste the fowl with softened butter.

  8. Allow it to brown.

Make the gravy

  1. After removing the fowl, pour off the grease.

  2. Add water to the pan.

  3. Boil.

  4. Thicken.

  5. Strain for gravy.

What each ingredient does

Oysters
Provide the main flavor and a tender, briny texture throughout the stuffing.
White bread crumbs
Form the body of the stuffing and soak up the butter and oyster liquor.
Oyster crackers
Add extra crumb structure and a toasty, savory base to the stuffing.
Butter
Adds richness and moistness, and helps the crumbs brown in the oven.
Egg
Binds the crumbs together so the stuffing holds its shape when cooked.

The step that matters

Stir gently to mix without making it pasty. Overworking bread-based mixtures releases starch and compacts the crumbs, making the stuffing dense and gluey instead of light and tender.
