Why it works: Chicken and pork match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 5,417 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓

Truffled Oysters

Ingredients

Directions

Prepare the filling

  1. Mince and pound the chicken and salt pork together.

  2. Add finely minced red or pickled pepper and mix in the truffles cut to the size of peas.

Stuff the oysters

  1. Open each oyster by inserting a knife at the edge and split it without making a large opening.

  2. Stuff each oyster with a small teaspoonful of the truffle mixture.

Coat and fry

  1. Coat the stuffed oysters in flour, then dip them in beaten egg.

  2. Fry the oysters in hot oil for 3-4 minutes until golden brown, then drain on paper.

What each ingredient does

Oysters
Serve as the main body of each bite, cooking gently inside the crisp coating.
Eggs
Beaten egg binds the flour coating so it adheres and fries to a golden crust.
Truffles
Provide a strong earthy aroma that perfumes the rich, savoury filling.
Salt pork
Adds fat and richness, keeping the minced filling moist and flavourful.
Chicken breast
Supplies lean protein that gives the filling body and a mild savoury base.

The step that matters

Splitting the oysters. Cutting the oyster open too wide lets the filling fall out and the oyster overcook. A small, controlled opening keeps the filling inside while the oyster heats through in the hot oil.
