Lambs’ Tongues with Artichokes

Ingredients

Directions

  1. Boil the tongues in salted water for at least 2 hours. You can do this the night before.

  2. Cool the tongues in cold water, peel off the skin, and split them lengthwise.

  3. After roasting meat, place the tongues in the roasting pan to glaze for about 5 minutes until slightly browned.

  4. Boil the artichokes in salted water until tender, about 30 minutes. Cut them in half and scoop out the fibrous part.

  5. Drain the artichokes and serve half a tongue with half an artichoke on each end, topped with brown gravy.
