Filbert Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the nuts

  1. Break the shells of the filbert nuts using a mortar.

  2. Remove all the shells and pound the nuts very fine.

Make the dough

  1. Mix the ground nuts with the whites of eggs until well combined, ensuring the mixture does not become oily.

  2. Combine the powdered sugar with the nut and egg mixture to achieve a proper thickness.

Bake and serve

  1. Preheat your oven to 350°F (175°C).

  2. Drop small pieces of the mixture onto sheets of paper, about the size of orange and lemon biscuits.

  3. Bake until they are a fine brown and all look alike.

  4. Allow the biscuits to cool before removing them from the paper.

What each ingredient does

Filbert nuts
Provide the main flavour and bulk of the biscuits, forming the body of the dough.
Whites of eggs
Bind the ground nuts into a cohesive dough that holds its shape when baked.
Powdered sugar
Adds sweetness and firms the mixture to a workable thickness.

The step that matters

Mixing the nuts with the egg whites. The mixture must be well combined without becoming oily, because excess oil from the nuts separating out can make the biscuits greasy and spread unevenly. Thorough, gentle mixing keeps the dough cohesive.

Swap the filbert

How well each one fits the dish's main ingredients (sugar, nuts, egg):

  1. Pistachiofits better
  2. Almondfits better
  3. Pecansfits about as well
  4. Filbertthe original

Fit is the average pairing score against sugar, nuts, egg. Candidates are from the same food group and used in at least 100 recipes.
