What each ingredient does

Moralia cherries
Provide the fruit, flavour and the sugars that ferment into alcohol.
Sugar
Feeds the fermentation and adds sweetness that balances the fruit's tartness.

The step that matters

Boil the sugar syrup to a candy stage. The syrup must be fully dissolved and cooled before it touches the fruit. Hot syrup can damage the cherries and kill yeast, so the fermentation may stall or fail.
