  1. Wash and scrape the carrots, then boil them in a large pot of water until soft.

  2. Remove the skins and grate ¼ pound of the middle part of the carrots.

Make the filling

  1. In a bowl, mix the grated carrots with ½ cup of clarified butter, 4 beaten eggs, sugar, and brandy to taste.

Bake

  1. Preheat the oven to 350°F (175°C).

  2. Place puff pastry in a baking dish, pour the carrot mixture on top, and add candied orange or lemon peel.

  3. Bake until set and golden brown.

What each ingredient does

Carrots
Form the main body of the pudding and add natural sweetness and moisture.
Clarified butter
Adds richness and fat, giving the pudding a smooth, tender texture.
Eggs
Bind the mixture and set during baking to give the pudding its structure.
Puff pastry
Forms a crisp, flaky base that browns in the oven under the filling.

The step that matters

Bake until set and golden brown. Eggs set as they heat, so underbaking leaves the custard-like filling loose, while overbaking can make it dry and rubbery. Watch for a firm centre and even golden colour.
