Green Gooseberries, Wet
Ingredients
Directions
Prick the gooseberries a few times with a fine needle.
Soak them in cold water.
Blanch the gooseberries in boiling water until they float, then transfer them to cold water.
If desired, add a little salt or baking soda to enhance the green color.
Boil the loaf sugar to the 'Feather' stage, then add the gooseberries.
Boil three times, pouring the mixture into a pan and skimming the surface each time.
Repeat this process for six days, reducing the boiling intensity each day and adding fresh syrup daily.
