On Cream and Other Ices

Ingredients

Directions

  1. Break the ice into small pieces and place it around the freezing pot.

  2. Set the freezing pot in the center of the ice, ensuring it is clean and covered until ready.

  3. When ready, carefully remove the cover and wipe the pot with a clean cloth.

  4. Add your cream ingredients to the pot, cover it with paper, and close the lid.

  5. Turn the pot quickly in the ice for 5 minutes, holding the handles.

  6. Remove the cover, scrape the ice from the sides, and mix well with a spatula until smooth.

  7. Replace the cover for 3-4 minutes, then turn the pot briskly in the ice again.

  8. Uncover and stir, scraping and mixing until the cream is set to a butter-like consistency.
