Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mixture

  1. Combine egg yolks and powdered sugar in a bowl, add vanilla, and mix well.

  2. Beat egg whites in another bowl until stiff peaks form.

  3. Gently fold the whipped egg whites into the yolk mixture.

Fill and bake

  1. Prepare paper cases and fill them with the cream mixture.

  2. Dust tops with powdered sugar and bake at 350°F (175°C) for 5 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lightens the mixture and helps it rise.
Egg yolks
Add richness and structure, and help the mixture set as it bakes.
Powdered sugar
Sweetens the mixture and dissolves easily into the yolks, and dusts the tops for a sweet finish.

The step that matters

Gently fold the whipped egg whites into the yolk mixture. Whipped egg whites hold air in a foam. Stirring vigorously or overmixing knocks that air out, so the biscuits bake up flatter and denser instead of light.
