Moss Biscuits

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Make the paste

  1. Pound the almonds in a mortar with the egg whites until smooth.

  2. Gradually mix in the powdered sugar and pound into a thick paste.

  3. Remove the paste from the mortar and work it on a clean surface.

  4. Roll the paste flat and cut into pieces the size of a large plum.

Shape and bake

  1. Dip one side of each piece into prepared cochineal.

  2. Press the colored side against a sieve until it protrudes like moss.

  3. Let the pieces dry without touching the bottom of the sieve.

  4. Once set, remove from the sieve and bake on plates lined with parchment paper in a gentle oven (300°F / 150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and nutty flavor of the paste.
Egg whites
Bind the ground almonds and sugar into a smooth, workable paste.
Sugar
Adds sweetness and helps the paste hold its shape.
Prepared cochineal
Colors one side of each piece for the moss-like appearance.

The step that matters

Let the pieces dry until set before baking. If the pieces are moved or baked before the surface firms, the pressed texture collapses and the moss effect is lost. Drying lets the egg white and sugar form a stable surface that keeps its shape in the oven.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
