Italian Meringues

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Cut the almonds into long pieces.

Make and bake

  1. Beat the eggs and sugar together until well combined.

  2. Fold in the almonds and orange flower extract if using.

  3. Spoon the mixture into deep square cases.

  4. Sift powdered sugar over the tops of the meringues and blow off the excess.

  5. Bake on a sturdy tin plate until set and lightly colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to form the airy foam that gives the meringue its structure.
Sugar
Stabilizes the whipped egg foam and adds sweetness and gloss.
Almonds
Add body and texture to the meringue as they are folded through the mixture.

The step that matters

Beat the eggs and sugar until well combined. Under-beaten or over-beaten egg foam will not hold its shape well. The sugar helps stabilize the foam, so the eggs and sugar must be fully combined before the almonds are folded in to keep the meringue airy during baking.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (almond, egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
