On Cream and Other Ices

Ingredients

Directions

  1. Break the ice into small pieces and place it around the freezing pot.

  2. Set the freezing pot in the center of the ice, ensuring it is clean and covered until ready.

  3. Remove the cover carefully, wipe out the pot with a clean cloth, and add your ingredients.

  4. Cover the top with paper, close the lid, and turn the pot in the ice for 5 minutes.

  5. Remove the cover, scrape the ice from the sides, and mix until smooth.

  6. Replace the cover for 3-4 minutes, then turn the pot in the ice again.

  7. Uncover and stir, scraping and mixing until the cream has set to a butter-like consistency.
