Italian Meringues

Oven, in the book's wordsA gentle oven

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the almonds into long pieces.

  2. Prepare the meringue paste as for Dry Meringues.

  3. Add the almond pieces and orange flowers to the paste.

Bake and finish

  1. Place the mixture into deep square cases.

  2. Sift powdered sugar over the tops of the meringues and blow off the excess sugar.

  3. Bake in a gentle oven at 300°F (150°C) until done.
