Rose Almond Comfits

Ingredients

Directions

  1. Clarify the sugar by adding distilled rose water.

  2. On the third day, add a little liquid carmine to the syrup for color.

  3. The first charge on the third day should include a little liquid gum.

  4. Reduce the syrup quantity with each charge, ending with a small amount.

  5. Heat the mixture to the temperature of the sun on a moderately warm day.

  6. Do not add carmine to the syrup on the fourth day.
