Candied Fruit

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preserve the fruit in syrup, strain, and rinse in warm water to remove excess sugar.

  2. Ensure the fruit is completely dry before proceeding.

  3. Arrange the fruit in a nearly square mold with wire gratings, placing them side by side without touching.

  4. Layer the fruit types, covering each with a grating and placing a weight on top to keep them firm.

  5. Preheat your oven to 350°F (175°C) and place the mold inside.

  6. Boil enough clarified sugar to fill the mold, removing it from heat as soon as it reaches a light boil.

  7. Skim off any candy formed on the surface as it cools, then pour the sugar into the mold.

  8. Allow the mixture to candy undisturbed for 10 to 12 hours at a consistent heat.

  9. Uncork the mold to strain out excess syrup into a bowl.
