Green Hops, Wet
Ingredients
Directions
Slit the gooseberries across down to the stem and remove the seeds.
Thread a needle with white thread, knot the end, and pass the needle through the stem of each gooseberry to form a string.
Place the string of gooseberries in a pan of cold water with a handful of coarse sea salt and let them soak overnight.
The next day, transfer them to a pan of fresh water and blanch until tender.
Drain the gooseberries and preserve them as you would green apricots.
