Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Angelica Comfits

Ingredients

Directions

  1. Cut angelica into small rings.

  2. Blanch the rings in hot water, then transfer to cold water.

  3. Drain the rings and place them in syrup.

  4. Boil until the syrup reaches a pearl stage.

  5. Remove from syrup and place on sieves to dry in a warm area, turning occasionally to prevent sticking.

  6. Once dry, place them in a comfit pan and coat as you would with cinnamon comfits.

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Cinnamonfits better

  4. Angelicathe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
