Make the base

  1. Mix the egg yolks with spring water and noyau or maraschino.

  2. Add syrup to your liking.

Cook and freeze

  1. Heat the mixture in a pan, whisking as if whipping egg whites.

  2. When nearly boiling, remove from heat and continue whisking until frothy.

  3. Pour into a freezing pot and let it sit for 2-3 hours without stirring.

  4. Optionally, line the pot with paper for easier removal.

Serve

  1. To serve, dip the freezing pot in warm water and turn out the ice onto a dish.

What each ingredient does

Egg yolks
Thicken the mixture as they heat and set into a smooth, creamy frozen texture.
Spring water
Provides the liquid base that the yolks are whisked and frozen into.

The step that matters

Removing from heat just before boiling. Egg yolks scramble if overheated. Stopping when nearly boiling, then whisking, keeps the custard smooth and lightly thickened rather than curdled.
