Flat Ginger-Bread Nuts

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Sift the flour onto your work surface and create a wall.

  2. Add the treacle, moist sugar, butter, allspice, ginger, and finely chopped orange, lemon, and citron peel.

  3. Mix everything together to form a paste, using as little extra flour as possible.

Shape and bake

  1. Roll out the dough to about the size of a half crown.

  2. Flatten the pieces slightly with your fingers.

  3. Bake on buttered paper in a hot oven (400°F / 200°C) until done.

  4. Remove from the paper immediately to prevent sticking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that keeps the dough rich and tender while it bakes.
Treacle
Adds sweetness, dark colour and moisture that gives the nuts their chewy character.
Moist sugar
Adds sweetness and moisture, and helps the nuts brown as they bake.
Flour
Provides the structure that holds the dough together and sets as it bakes.
Ginger
Adds warm, spicy aroma and flavour to the dough.

The step that matters

Remove from the paper immediately. Warm, freshly baked treacle dough is soft and sticky, and it hardens as it cools, so lifting it off right away prevents it from bonding to the paper.

Swap the allspice

How well each one fits the dish's main ingredients (butter, ginger, sugar, flour):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Allspicethe original

Fit is the average pairing score against butter, ginger, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
