Ingredients

Directions

Make the jelly

  1. Pound the almonds to produce 1½ pints of almond milk.

  2. Add 1 ounce of clarified isinglass and ½ pint of syrup to the almond milk.

  3. If desired, separate the mixture into parts and add food coloring to each part.

Set in layers

  1. Pour the mixture into molds in layers about 1 inch deep, allowing each layer to set before adding the next.

  2. Use different colors and arrange them according to your taste.

What each ingredient does

Almonds
Provide the base almond milk, giving the jelly its flavor and body.
Clarified isinglass
Gelatinizes the almond milk so it sets firm into a jelly.
Syrup
Adds sweetness and helps the jelly set clear.

The step that matters

Allowing each layer to set before adding the next. If a layer is poured before the one below has firmed, the layers blend together and the colors muddy. Letting each layer set first keeps the distinct bands sharp.

Swap the almond

How well each one fits the dish's main ingredients (milk, syrup):

  2. Peanutfits about as well
