Ingredients

Directions

Make the batter

  1. Separate the egg whites from the yolks.

  2. Beat the egg whites until stiff peaks form.

  3. Whisk in the yolks and sugar, then add caraway seeds to taste.

  4. Gently mix in the flour with a spoon.

  5. Pour the mixture into buttered molds that are 3 inches wide, 2 inches deep, and 12 inches long.

Bake and brown

  1. Bake in a warm oven until set.

  2. Once cooled, slice the rusks and brown them in a hot oven, turning them to brown both sides.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while the yolks add richness and help set the crumb.
Sugar
Adds sweetness and helps the surface brown during baking.
Flour
Provides the structure that holds the rusks together once set.
Caraway seeds
Add a distinctive aroma and flavour.

The step that matters

Gently mix in the flour with a spoon. Vigorous mixing deflates the whipped egg whites and overdevelops the flour's gluten, so the batter loses its lift and the rusks bake up dense and tough.

Swap the caraway

How well each one fits the dish's main ingredients (sugar, egg, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegfits better
  4. Carawaythe original

Fit is the average pairing score against sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
