On Desserts and Bills of Fare
Ingredients
Directions
Pour water into a copper or tin mold and place it over rough ice mixed with salt.
Leave it for a few hours until it freezes solid.
For colored layers, freeze a layer of clear water first, then pour in an inch of water colored with cochineal and freeze again.
Repeat until the mold is filled.
Introduce fresh flowers and green leaves into the mold before freezing.
Once frozen, turn out the basket and place it over a nicely folded napkin.
Fill the basket with your fruit-shaped ices, painted to resemble real fruits.
