What each ingredient does

Cherries
Provide the fruit flavor, pulp, and natural acidity that give the jam its body.
Sugar
Adds sweetness and helps thicken and preserve the jam by binding water.

The step that matters

Return the mixture to the heat and stir until you can see the bottom of the pan clearly.. The jam thickens as water evaporates and the sugar concentrates. Stirring keeps it from scorching, and a clear pan bottom shows the mixture is thick enough to set properly.
