Directions

Prepare the paste

  1. Dry, pound, and sift the scrapings and broken bits through a silk sieve.

  2. Mix the sifted mixture with moistened gum dragon to form a gum paste.

  3. Roll out a large piece of the paste with a rolling pin.

  4. Cut the paste into various shapes using different tools.

Dry and finish

  1. Prepare about 8 pounds of shaped comfits and dry them in the stove.

  2. Place the dried comfits into the comfit pan over the barrel and work them as before.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scrapings of comfit pan
Supply the sugar-coated flavor and bulk that make up the paste.
Broken bits of comfits
Add concentrated sweet flavor and fine sugar particles to the paste.
Gum dragon
Binds the sifted sugar particles into a cohesive, rollable gum paste.

The step that matters

Drying the shaped comfits in the stove. Shaped pieces must dry fully before further coating, because trapped moisture can soften the sugar layers and cause them to crack or dissolve unevenly.

Swap the bergamot

How well each one fits the dish's main ingredients (coffee, chocolate, vanilla, sugar):

  1. Cherryfits better
  2. Figfits better
  3. Coconutfits better
  4. Bergamotthe original

Fit is the average pairing score against coffee, chocolate, vanilla, sugar. Candidates are from the same food group and used in at least 100 recipes.
