Ingredients

Directions

Make the dough

  1. Pound the almonds very fine, sprinkling them with orange flower water.

  2. When smooth, place the mixture in a small pan with sifted sugar.

  3. Heat the pan on a slow fire, stirring until the mixture no longer sticks to your fingers.

  4. Remove from heat and roll the mixture into small round shapes or cut into various forms.

Ice and finish

  1. Make royal icing in different colors.

  2. Dip one side of the biscuits in the icing.

  3. Set the biscuits on wire racks to drain.

  4. Optionally, sprinkle the biscuits with colored pistachios or almonds.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Form the main body of the biscuits, providing structure and rich flavour once ground.
Sugar
Sweetens the biscuits and helps bind the mixture as it is heated.

The step that matters

Heating the almond mixture on a slow fire. Heating gently and stirring until the mixture stops sticking to the fingers dries it to a workable dough. Too little heat leaves it sticky, while too much can scorch the sugar and almonds.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
