Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Form the bulk of the confection and give a crunchy bite once coated.
Sugar
Forms the syrup and then the caramel that gives the crisp, glossy coating.
Orange-flower water
Adds a floral aroma and a light shine to the finished almonds.

The step that matters

Boiling the sugar to caramel. Once sugar turns amber it darkens quickly and becomes bitter if it overcooks. Pulling it at the right colour and coating the almonds before it hardens gives an even, crisp shell.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
