Brioche Paste, Rich

Ingredients

Directions

  1. Sift the flour onto a clean surface.

  2. Take a quarter of the flour, make a hole in the center, and pour in the yeast dissolved in a little warm water.

  3. Mix into a dough that is not too stiff or too soft, then mold into a round ball.

  4. Mark the top with a knife in a cross pattern to form diamonds.

  5. Place the dough in a warm area to rise until it doubles in size.

  6. Make a hole in the center of the remaining flour and add melted butter, salt, sugar, and eggs.

  7. Mix into a dough by adding the eggs one at a time.

  8. Knead the dough for 15 minutes until smooth and elastic.

  9. Combine the sponge with the dough and mix until smooth again.
