Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which is cooked through in the simmering gravy.
Beef gravy
Forms the moist, savoury liquid that carries the filling.
Butter
Adds richness and flavour to the thickened base.
Flour
Thickens the gravy into a smooth, body-rich sauce.

The step that matters

Thickening the gravy smoothly. Flour must be cooked into the butter and gravy slowly over low heat and added gradually. Adding it all at once or simmering too hard can leave lumps and a thin or uneven texture.
