A Ratafia Pudding

Ingredients

Directions

  1. Fill a stewpan with enough water to reach halfway up a three-pint mold and place it on low heat.

  2. Remove the mold from the water and butter the inside well.

  3. Decorate the buttered inside with stoned raisins and dried cherries.

  4. Cover the inside of the mold with ratafias.

  5. Cut the sponge cakes in half and place them in the mold, mixing in some ratafias and dried cherries.

  6. Fill the mold with more ratafias until it is three-quarters full.

  7. Whisk the eggs just to break the yolks, then pour in the boiling milk.

  8. Add sugar to taste and mix well with the whisk.

  9. Pour the mixture into the mold.

  10. Cover the mold with a cloth or lid and place it back into the stewpan.
