Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the mixture into a jelly as it cools.
Sweet almonds
Provide the main almond flavour and body through the pounded nut pulp.
Bitter almonds
Add a concentrated almond aroma that complements the sweet almonds.
Cream
Adds richness and fat, giving a softer, smoother texture to the set jelly.
Milk
Adds moisture and dairy body, softening the set and balancing the richness.

The step that matters

Removing the skin and sediment. Skin forming on the cooling liquid and sediment from the almonds would make the jelly cloudy and grainy. Straining well and pouring off the clear liquid gives a smooth, clear set.

Swap the orange

How well each one fits the dish's main ingredients (almond, milk, cream, sugar, brandy):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits better
  4. Orangethe original

Fit is the average pairing score against almond, milk, cream, sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
